The secret of Roman gastronomy is based on its ingredients, in other words those "precious" traditional Roman products which still bear witness to a centuries-old gastronomic culture.
Many traditional products of the Roman countryside, each one with its own history and gastronomic tradition, come from the 121 municipalities in the province of Rome.
A substantial number of the hundreds of certified italian products comes from the Latium region.
We have chosen six certified products, recognised at the European level, that contain the words “Roma”, “Romano” and “Romanesco” or are closely linked to the territory and to a long-standing tradition that makes them protagonists of Roman cuisine:
